Vegetable Stir Fry

Ingredients
- 2 tablespoons vegetable oil
- 1 pack (350g) prepared vegetables for stir-fry (or 350g of any suitable vegetables chopped into small strips)
- 1 clove garlic - peeled and finely chopped
- 1 red chilli (optional - either omit completely or put in less according to taste) seeded and finely chopped
- 1 tablespoon soy sauce
- Juice of 1 lime
- 1 OXO Vegetable Stock Cube
- 1 tablespoon honey
- 1 tablespoon sesame seeds
Method
- Heat a wok or large frying pan over a high heat and add the oil.
- Add the vegetables and stir fry for 2 minutes, moving them around constantly and coating with the oil.
- Add the chilli and garlic and continue to cook for another 2 minutes.
- Add the soy sauce and lime juice, sprinkle over the OXO Vegetable Stock Cube and stir well.
- Cook for a minute more, add the honey, stir through and remove from the heat.
- Sprinkle over the sesame seeds and serve immediately with rice or noodles
Cook's tip: if you have some toasted sesame oil, then a few drops stirred through with the honey gives the dish a delicious flavour.
You can replace the OXO Vegetable stock cube with:
- 1-2 teaspoons of OXO Vegetable Reduced Salt Stock Granules
- 1 tablespoon of OXO Vegetable Concentrated Liquid Stock
